  14. 1 cup Tropolite whipping cream
  15. 1 Tbsp buttermilk
  16. 4-6 Tbsp chocolate ganache

  18. As required few readymade chocolate or homemade chocolate from White and Dark Chocolate Compound
  19. As required Grated Dark Chocolate for sprinkling on cake

Steps to make to make Dark Chocolate Buttermilk Cake

  1. For buttermilk:-
    I made my own buttermilk. Add 1 Tbsp of white vinegar into 1 cup of milk. Stir and keep aside for 5 mins.
    In a bowl, sieve and combine dry ingredients maida, cocoa powder, baking powder.
  2. In another large bowl, mix buttermilk and powdered sugar. Then add baking soda and mix. Next add 1/4 cup of refined oil and mix well. Add vanilla essence and mix well.
    Now add dry ingredients in the wet ingredients and mix well by fold method.
  3. Keep the butter paper in the bottom of cake tin. Brush the inside of cake tin with butter or oil. Then pour mixture into greased cake tin. Tap the tin to spread evenly. Spread salt in the bottom of pan. Place a stand inside. Pre-heat pan on high flame for 5 mins. Now place cake tin on the stand, close the lid and bake for 45 mins on low flame.
  4. After 45 mins check the cake with toothpick, if toothpick is clean then remove cake tin from pan. Remove cake from tin when it's cool completely.
  5. For making Dark Chocolate Ganache:-
    Cut the dark chocolate compound into small pieces and place in a medium bowl. Heat the cream on the stovetop or microwave. Turn off the heat just before it starts to boil and immediately pour the cream over the chocolate. Stir with a spoon, cover and set aside for 2 to 3 minutes. Then after 3 mins stir again until shiny and smooth. Keep it aside for 10 mins before applying on cake.
  6. Divide cake into 2 horizontal layers.
    First sprinkle sugar syrup (optional) on both layers. Then spread chocolate ganache from center to outward on first layer. Put second layer on top of first and spread ganache over it and all sides. Keep it in refrigerator for 10 to 15 mins before decorating with chocolate frosting.
  7. For Chocolate Frosting:- Whisking 1 cup Tropolite whipping cream, 1 Tbsp buttermilk and 4 Tbsp chocolate ganache by electric beater. Frosting consistency should be creamy but can hold peak. Remove the cake from refrigerator. Spread chocolate frosting on top and all sides.
  8. Sprinkle grated chocolate on top of the cake and all sides. Place some readymade or homemade chocolate on the top of the cake.
    Refrigerate the cake at least 30 mins before serving.
